Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional) (almonds, pecans, or walnuts)
  • 1/2 cup chocolate chips (optional) (for chocolate-covered toffee)

Instructions

Step 1: Prepare the Baking Sheet

  • Line a baking sheet with parchment paper or a silicone mat.
  • If using nuts, spread them evenly on the sheet.

Step 2: Melt the Butter and Sugar

  • In a heavy-bottomed saucepan, combine butter, sugar, and salt over medium heat.
  • Stir continuously until melted and well combined.

Step 3: Cook the Toffee

  • Allow the mixture to boil, stirring occasionally.
  • Use a candy thermometer to monitor the temperature.
  • Cook until the mixture reaches 310°F (hard crack stage) and turns golden brown.

Step 4: Pour and Cool

  • Remove from heat and stir in vanilla extract.
  • Pour the hot toffee onto the prepared baking sheet and spread evenly.
  • If using chocolate, sprinkle chocolate chips on top while warm, then spread after melting.

Step 5: Let It Set and Break Into Pieces

  • Allow the toffee to cool completely at room temperature (about 30 minutes).
  • Once hardened, break it into pieces and enjoy.

Notes

  • Prevent Graininess: Add 1 tablespoon of corn syrup or avoid over-stirring.
  • Storage: Keep in an airtight container for up to 2 weeks at room temperature or 3 months in the freezer.
  • Variations: Try coffee-infused toffee, spiced toffee, or vegan alternatives with plant-based butter.
