Crispy Corn Nuggets Recipe: Quick & Healthy Snack for Every Occasion

Crispy on the outside, soft and sweet on the inside—these corn nuggets are a quick and easy snack or appetizer. This recipe includes deep-fried and air fryer options, with variations for vegan and gluten-free diets.

Ingredients

  • 1/2 cup all-purpose flour (or gluten-free flour blend)

  • 1/2 cup yellow cornmeal

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 1 large egg (or flax egg for vegan)

  • 1/3 cup milk (dairy or plant-based)

  • 1 cup corn kernels (fresh, canned, or frozen)

  • Oil for frying or oil spray for air fryer

Optional Add-ins:

  • 1/2 cup shredded cheese

  • 1 tbsp chopped jalapeños

  • 1 tbsp chopped parsley or chives

Instructions

  • Mix dry ingredients: In a bowl, combine flour, cornmeal, baking powder, salt, and pepper.

  • Mix wet ingredients: In a separate bowl, whisk the egg and milk together.

  • Combine mixtures: Pour wet into dry and stir until just combined. Fold in corn and any add-ins.

  • Deep Fry: Heat oil to 350°F (180°C). Drop spoonfuls of batter into oil. Fry 2–3 mins per side or until golden.

  • Air Fry Option: Preheat air fryer to 375°F (190°C). Scoop batter into greased basket. Cook 8–10 mins, flipping halfway.

 

  • Serve: Cool slightly and serve with your favorite dip.

Notes

  • For crispier nuggets, let batter chill 10 minutes before frying.

  • Store leftovers in fridge up to 3 days or freeze for 1 month.

  • Reheat in air fryer or oven for best texture.

 

  • Avoid over-mixing the batter—it keeps the nuggets light and fluffy.
